Butter (or Golden Wax) Beans

(Phaseolus vulgaris)

 

Freshly picked pods Demi-sec

A bush bean grown for its immature pods, though any stray pods missed are fine left to develop as demi-sec. Ready to harvest when the green hue just starts to fade, but don't leave them until they are bright yellow as they will then be too tough. Once cooked these pods do turn bright yellow anyway. Golden Wax Beans are known locally as Butter Beans so we continue tradition rather than use their official name.

"As you know its all in meldy flavours and the first bit softly melted down onion and garlic is the sooo important base then the same after the toms are added so not awash with liquid and that addition of a little chilli in dried form is good - did I use fresh? in which case get rid of the rawwwwwwness fast along with the onions and garlic. Herbs and tomatoes will deal with the salt most likely, so the addition of a little only at the end if needed so as not to harden those legumes"
